There are three available options for naming print jobs.

Automatically create a unique file name for each print job: Each job is assigned a unique name using a GUID string. This name is unique in time and space, making it virtually impossible to overwrite past print jobs. This option is selected by default.

Use the print job name to create the file name: All jobs will be printed using the name of the print job. If the name of the print job contains invalid characters, they are replaced with underscores. A unique string of characters is appended after the name of the print job to ensure that each print job will not overwrite a previously printed file.

Always has filename: You can assign a specific file name to be used for all print jobs. This option is useful if you have configured another application to expect, retrieve, or poll for a specific file name.
To configure a file name:

Enter the file name for the print job. Do not append an extension; this is done automatically. To include an identifier in the file name, you can use the %guid%, %machine%, and %username% variables described under Available Variables.

If a file is spooled to a folder containing a file with the same name, the new file will overwrite the existing one.
